India is a land of magnificent curries. Bengali Aloor Dum is definitely one among them. And its best partner is Luchi which nothing but Poori for other parts of indis.We call poori as luchi in bengali which could be either made of atta or maida. "Luchi Aloor Dum”- a mouthwatering breakfast for most of the bengalies on Sundays or any other small occasions.
Dum Aloo (Aloor Dum)
- 500 gm of Baby Potato/3-4 gold Potatoes , cut into big cubes
- Large onions peeled and chopped
- 2 small tomatoes chopped
- 4-5 cloves of garlic chopped
- 1 inch of ginger chopped
- ½ tbs of turmeric powder
- 1 tbs of red pepper powder
- ½ tbs cumin powder
- ½ tbs of coriander powder
- 1 tbs of garam masala
- ½ tbs of cumin seeds
- 1-2 bay leaf
- 2-3 tbs of oil
- salt as per taste
- a bit of sugar
- Heat oil in a large pan/kadai, fry the potatoes till golden
at med –low ,take out and drain over paper towel.
- Now add the cumin seeds , let it pop up , add bay leaf ,
chopped onions,garlic, ginger fry for 5-8 mins at med –low.
- Add all the dry masalas , turmeric, red
pepper,cumin,corriander and salt ,add bit of sugar also .fry all for
5 mints
Add fried potatoes , stir fry whole mixture untill potatoes retain a nice yellow colour ,Now add tomatoes and fry for more 2-3 mins.
- Add warm water ½ cup and cover , cook for 30 mints or so
till potatoes are done at low or till gravy nicely coats potatoes.
It must be semi-gravy or dry.
- Add garam masala, and chopped corriander leaves . Can add 1
tbs of ghee to enhance the flavour.(Optional)
- Take out and serve with Puri/Luchi.
