Fried Ice Cream


 Yesterday me and Tandra went to Wangs kitchen in spencer plaza..and guess what!!!We came across a wonderful dessert called Fried Ice-cream..Its so amazing yummy crunchy outside nice cold inside.Not many places around here serve it.It’s a very popular dessert at Mexican and Chinese restaurants and is sometimes made with a tempura batter instead of the cornflakes.I used both here. Some places also deep freeze the ice cream prior to deep frying to give the ice cream a little more staying power when submerged in the 375 degree oil. The key in most cases is making sure the ice cream is thoroughly coated before frying.So, here it goes....

Fried Ice Cream

Ingredients:
  • 1 quart vanilla ice cream
  • 3 cups crushed cornflakes cereal
  • 1 teaspoon ground cinnamon
  • 3 egg whites
  • 2 quarts oil for frying 
  • 1 cup Tempura batter
Method: 
  • Scoop ice cream into 8 – 1/2 cup sized balls. Place on baking sheet and freeze until firm, about 1 hour.
  • In a shallow dish, combine cornflakes and cinnamon. In another dish, beat egg whites until foamy. Roll ice cream balls in egg whites, then in cornflakes, covering ice cream completely. Repeat if necessary. Freeze again until firm, 3 hours.
  • In deep fryer or large, heavy saucepan, heat oil to 375 degrees F (190 degrees C).
  • Using a basket or slotted spoon, fry ice cream balls 1 or 2 at a time, for 10 to 15 seconds, until golden. Drain quickly on paper towels and serve immediately.

 Tempura Batter Preparation

Tempura are battered and deep fried dishes, which are commonly eaten in Japan. This is a recipe to make basic batter. Using ice water for the batter is recommended in order to make crispy tempura. It's good to make the batter right before frying tempura. Preparing the batter ahead of time is not recommended.

Ingredients:

  • 1 egg
  • 1 cup ice water/cold water
  • 1 cup all purpose flour, sifted

Method:

Beat an egg in a bowl. Add ice water in the bowl. Be sure to use very cold water. Add sifted flour in the bowl and mix lightly. Be careful not to over mix the batter.
