Piyaji or Onion Fritters /Pakora

Telebhaja or deep fried savory fritter is the most popular snacking item for Bengalis. The matter that it pairs well with our most favorite snack muri (puffed rice), gives it a huge fan following.
One of the best fritter I personally like is piyaji. Well I do not wait for any rain or monsoon to come for preparing this...My all time favorite piyaji goes well with dal and rice or with tea in evening.


Piyaji or Onion Fritters /Pakora


Ingredients:

  • Onion(big) : 2 (chopped lengthwise)
  • Chick pea flour (besan) : about 1/2 a cup or as needed
  • Rice Flour: 1 Tsp
  • Green chilli : 2-3 ( finely chopped)
  • Salt to taste
  • Red chilli powder : 1-2 tsp.
  • Baking Soda : a pinch
  • Oil for deep frying

Method:

  • In a big bowl, first take chopped onions, green chillies.
  • Then add all the other ingredients. Mix together, then add water slowly as needed and make a smooth creamy batter, not runny.
  • If the batter is too thin, add some more chick pea flour and Rice flour.
  • In a pan, heat enough oil, drop one big spoonful of batter, one by one. Make pakoras thin, then it will be more crispy. Fry till dark brown from both sides. Fry in medium/low flame so that inside of batter can cook.

N.B: Do not make the batter and fry it later. The onions will release lots of water and will make the batter watery. Make it fresh, fry and enjoy.
