Panch Mishali Tarkari (Five Vegetable Medley)

This is one dish which is usually been cooked atlest once in a week to each hoousehold of Bengal.It goes well with both rice and roti and highly good for health.Five vegetables (this had radish and radish greens, green beans, Red Pumpkin, Ridge Gourd (Jhinga),potatoes) Apart from this I also use Carrot,Egg plant.
It takes very less time and easy to cook.One must try this at home.

Ingredients:

serves 4-5

Carrots - 2 chopped
Potatoes- 2 chopped
Eggplant - 1 small chopped
Radish with radish greens - 4-6 chopped
Bunch of green beans - chopped
1 tspoon panch phoron(panch phoran consists of fenugreek seed, nigella seed, cumin seed, black mustard seed and fennel seed in equal parts.)
Bay leaves:2
Red chilli: 2 dry
green chillies:2
Tomato- 1 medium chopped
Pinch of turmeric powder
salt to taste
1 tbspoon oil



Method:
  • Heat oil and temper it with panch phoron, bay leaves and red chilli.Wait till aroma arises.
  • Next add all the chopped vegetables except tomato,Green Chilli,add turmeric powder and let it cook for 7-8 minutes on low medium heat on closed lid.
  • One the vegetables are semi-cooked, add Tomato pieces.
  • Cook it all together for another 5-6 minutes till the vegetables are cooked and the water has disappeared.
  • Add water if you feel the vegetables have not boiled properly but try and avoid to add water.
  • Take it off the heat and garnish with chopped cilantro. Serve with dal, rice or even with chapati.

N.B:Try not to use water in order to boil the vegetable.Rather close the lid of kadai and cook in low flame so that the vegetable gets boiled properly with the water released by itself.That will taste good.
